• The facility is not dedicated gluten-free, which inherently raises cross-contamination concerns for celiac diners.
• There is evidence that a separate gluten-free menu exists and that gluten-free soy sauce can be provided, but this is not consistently documented as standard practice.
• Staff knowledge about gluten-free needs appears to be variable across experiences; some staff were able to answer questions and locate the GF menu, others needed to search or were less aware.
