• The restaurant describes protocols to reduce risk (hand washing, glove changes, clean equipment, specialized ordering instructions) and staff training on gluten-friendly preparation.
• Gluten-friendly menu items are prepared to order and validated by an in-house RD with the culinary team, but there is no gluten-free certification for these items.
